French Onion Soup


You need: (for 4 portions)
1,5 l (3 pts) fonds blanc
300 g (10 oz) onions
80 g (3 oz) butter
4 slices white bread
60 g (8 tbsp) Parmesan cheese
pepper, salt

Slice the onions and fry them in the butter (on low heat) until they turn golden brown. Add the fonds blanc, peppar and salt. Cook altogether for 10 minutes.
You can either cut the bread into fingerthick shreds and fry them, or toast it lightly in a toaster. Put the bread into the soup and add the Parmesan on top - ready.
In France the soup is portioned before adding bread and cheese.
