Cherry Cake


You need: (serves for 4)
5 eggs
120 g (4 oz) sugar
60 g (2 oz) flour
50 g (2 oz) bread crumbs
lemon peel, grated
500 g (1 lb) cherries
50 g (2 oz) butter

Stir the butter, one half of the sugar and the yolks until scummy. Add the beaten egg whites, the rest of the sugar and the other ingredients. Fill into a baking tin and put the cherries on top. Put it then in the oven on medium heat for half an hour.
